Its been driving me crazy, alright bastards from the north get the name Snow. From Dorne it is Sands. etc.... But I can not remember the Bastard name for the westerlands.
Does anyone else?
I flipped through my books but I couldn't find it.

That question would probably be best served at the ASOIAF forum itself.
Only ones that come to my mind are Snow, Rivers, Sand, Stone . . . it's been so long since I read the books I'm drawing a blank.

We are going to say that the war of five kings did not happen, but he did find out about the incest one way or another, so his marriage to Cersei was destroyed and he legitimized Edric as his heir. He then lived another 10 years or so. This also means that Eddard lived to a ripe old age.

Well, if events carried out the same they did in the books, Dany's barren, so we could assume that she died of old age over in the East. Or perhaps Jorah wasn't there and she and Viserys were killed as children by an assassin sent by Robert. I guess it depends on what Crakehall wants to do with the dragons and whether or not he wants them to play a part in the future, in which case, maybe it should remain a mystery until future notice. As for the Lannisters, we could assume they're descendants of Cersei's new marriage (if Robert didn't execute her) or maybe one of Kevan's sons, since the one twin wouldn't have been killed at Riverrun and Lancel wouldn't have become a religious zealot.

Also, add to that list of bastard names "Storm" for the Stormlands. So far, I believe that we've encountered a bastard from nearly every region in the books, except for the Westerlands and the Reech.
Jon Snow, Mya Stone, Edric Storm, Bastard Walder, Aurene Waters, Cotter Pyke, and the Sandsnakes.

Right. The Lannisters, once Robert found Cersei to be unfaithful were sent back to the Rock. The current Lannisters are still descendants of Joffrey, Myrcella and Tommen, who were all married and had children. They are most likely descendants of Joffrey.
For the sake of this game we will say that Dany lived and married someone unknown but she and her brother did have descendants, so somewhere there are living descendants, and those very eggs that were hatched in the book are still unhatched somewhere...

What about House Greyjoy? even with out the war of five kings did they still have issues with Theon and Euron and all that other stuff?

Whatever happend with them is now considered minor and relatively insignificant. All that really matters is that there are living descendants of at least one of those brothers (of Balon, including him).
