Any buildings constructed in the [main city] of your holdings are obviously not the only structures in the city, and very far from that. They are simply in addition to the huge city already in place.
There are likely going to be more options to buy as time goes on:
10 New Blacksmiths- Costs 15,000 and adds 700 income each turn.
10 New Bakeries- Costs 12,000 and adds 450 income each turn.
1 New Market Square- Costs 35,000 and adds 5,000 income each turn.
1 New Fishmarket- Costs 30,000 and adds 3,000 income each turn.
2 New Barracks- Costs 40,000 and adds 3,000 "fieldable" men permanently.
Improved Roadsystems- Costs 50,000 and adds 4,000 income each turn.
Improved Training Systems- Costs 60,000 and adds 6,000 "fieldable" men permanently.
1 New Fort (Small)- Costs 70,000 and adds 2,000 "fieldable" men permanently, and 2,000 income per turn.
1 New Fort (Medium)- Costs 100,000 and adds 4,000 "fieldable" men permanently, and 4,000 income per turn.
1 New Castle (Small)- Costs 150,000 and adds 6,000 "fieldable" men permanently, and 6,000 income per turn.

1 New Castle (Gigantic)- Costs 1,000,000 and adds 12,000 "fieldable" men permanently, and 12,000 income per turn.
