All produce in the kitchens has been checked by Maester Casimir before and after they are cooked, he has a fairly proficient knowledge of the most common poisions as well as a few of the more rare ones found in the north." I know, Felix just didn't want to take the risk. It was more of staying in character than anything. Felix is naturally suspicious, he thought "Why even bother eating this crap if it's poisioned." Besides, the stuff was from Roose's own plate.

As to your first question: We wanna get rich? I went to a con once and GRRM was there. Someone asked about the new mint the Manderlys were going to make for the Starks. GRRM said that the North has an abundance of silver mines, and that the Manderlys had connections with a couple of Free Cities banks.
