As long as we don't get our own hands dirty I'm fine. The beauty of the Red Wedding is that Freys became blamed for breaking guests right and the Boltons became Lords of the North. I don't want the Boltons to be seen to break guests rights. I would suggest coming with a mildly different plan.
Whose allying with the Reach by the way?

If we meet them in some place that isn't the Dreadfort then technically they aren't our guests so we're not breaking guest rights...

I thought they still counted as guests even if it wasn't the Dreadfort, but maybe not. Aren't there specific things on it though? I thought the people had to eat with you or something? Maybe if we get the Royces/lannisters to attack before we actually invite them in, we wouldn't be breaking any sort of guest right. Just starting a full out war but that's not the same.

Yeah they have to eat your bread and drink your wine, or something like that, so if the Royces and Lannisters attack as soon as they arrive then we should be fine!

Well, it would probably be better to PM the Tyrell's first so we can establish who's coming to this meeting. Then we can PM Randal and Rhodri (or whoever) and tell them, <whoever> will be such-a-place at such-a-date and perhaps tell them that the other house has agreed to help us ambush them and we need their help. Throw in a couple of patriotic lines about the country and the king and avenging. Then we just have to see what they say.

I would also suggest to be on the safe side not having it at the Dreadfort. The less we can show this as our idea the better.

Yeah, we want to absolve ourselves of as much responsibility as possible, although everyone already thinks of us as evil so I don't suppose it really makes much difference. That's why I was thinking have the attack before they actually reach the meeting.
